Born into a bistro-running family in Lyon, one could say that Claude Bosi was pre-enrolled on a crash course to gastronomic prowess. After deciding to become a chef at 16, he worked at top-end restaurants all over France, zigzagging from one temple of haute cuisine to another, including Alain Ducasse, Alain Passard and Michel Rostang. In 2007, Claude Bosi and team upped-sticks from Ludlow to London and haven’t looked back; Hibiscus is a darling of the capital’s famously persnickety restaurant critics and has won back the two Michelin stars it left in the Midlands.
Restaurant
Hibiscus’ private dining room, which accomodates up to 18 people seated or 30 standing, offers the Hibiscus restaurant experience in a discreet and comfortable setting. The decor is warm and unpretentious, constrasting with the cutting edge food being served.
Time spent with the French greats has given the chef a formidable touch – the dining room might be restrained, but this is more than made up for by Bosi’s accomplished, complex and highly-imaginative French cooking. At Hibiscus, classical technique meets intriguing flavour combinations in dishes such as Raw Bouquest Shrimps & Lychees, Warm Ravoli of Kohlrabi & Pig’s Trotters and Galician Sea Urchins.
Claude Bosi Chef & Owner
Born in Lyon, France, Claude Bosi moved to the United Kingdom in 1997, with a cv that spans French restaurants such as Raymond Point Carré, L’Arpège and Michel Rostang in Paris, and La Pyramide in Vienne. He settled in Shrosphire, where he opened Hibiscus in May 2000. After seven years and numerous accolades, Hibiscus was moved to London.
Marcus McGuinness Head Chef
Marcus McGuinness has been an integral member of the Hibiscus kitchen team since joining in Ludlow in 2006. He has worked with many notable chefs including Marcus Ashenford, at his four one-Michelin star establishments including 5 North Street, and Chavignol; and for a further two years with David Everitt-Matthias at two-star Michelin Le Champignon Suavage in Cheltenham.
Claire Bosi General Manager
With Hibiscus since inception, Claire Bosi seamlessly transferred to London the very personal service that defined Hibiscus in Ludlow. She also notably collaborated with the designer team to achieve the modern and unique décor which complements Hibiscus today.
Natalie Hadley Reception Manager
Being part of the original Hibiscus London ‘opening team’, Natalie Hadley has a very experienced perspective of the entire business at the restaurant. As the Reception Manager, her duties are wide-ranging, from reservations through to private event bookings. Her determination and hard work is attributed to the inspirational people she has worked with over the years.
